Progress Report

TODAY'S MENU

Breakfast--Oatmeal with frozen homegrown peaches, toasted walnuts, cinnamon, and nutmeg

Lunch--2 cups lentil soup (probably 1-1/3 cups lentils); apple; hot tea with some sugar (sore throat, cough)

Snack--A few pieces of granola with raisins (tablespoon?), <2 tablespoons ice cream (are we feeling needy here or what?), cup of green beans with about one small red potato (better choice for hunger now)

Supper--Stir fry of cabbage, broccoli, carrot, red onion, water chestnuts, edamame, green beans, red bell pepper, and baby corn, in 1-2 tablespoons peanut oil (I ate about a quarter of this); two meatballs (50 calories); two ounces tofu; 1/2 cup whole wheat linguine

PROGRESS REPORT

1 pound down in a bit less than a week, for 12+ pounds in five weeks!

    Congratulations on the 12 pounds! That is a great showing for 5 weeks. I hope you are pleased.

    Do you find it crazy that you aren't hungry? When we first started eating this way I foolishly thought I was going to starve. Instead I have been amazed by how much food I can eat and not be concerned about watching my weight. I find this way of eating to be very liberating.

Yes, Alicia, when I'm careful to get in all the veggies I need, I'm perfectly satisfied (and not craving of the goodies all around me with a large household), but when I'm in a hurry and can't plan or prepare sufficiently, I get more vulnerable. Yesterday was like that (the post above). I suspect the sugar in my cough syrup isn't helping!!!

    Thanks for the encouragement. :-) By the way, I'm mega-impressed by your beautiful gourmet meals, and the photography, too! Lovely. I'm not at a place in life for that kind of thing consistently, but I'm pretty happy with what I can pull off. :-)

    One of the things that helps me is having leftovers in the frig. I try to make a big pot of soup and/or a veggie casserole each week so that there is always something quick and healthy to eat.

    Thanks for the compliment on my recipes. Most of them are easier than you think. I rely heavily on presentation to make them look more elegant. If you ever have any questions on any of my recipes please feel free to ask.
